Oolong is a semi-oxidized tea with polyphenol qualities that differ from green tea and rooibos. It is a whole leaf tea that is never broken during rolling, so if the leaves have room to expand when steeping you'll have a forest of tea leaves in your pot. The leaves can also be re-infused 7 to 8 times and offer different tasting notes as the flavour develops with each infusion.
Research shows that the polyphenols in Oolong have properties that break down triglyceride fats and allow the body to use it up as energy rather then store it as fat. Further, Oolong has antiallergenic properties that seem to help sufferers of Eczema and Atopic Dermatitis. More information on the health benefits of Oolongs can be found at www.oolong.org.
Recommended steeping time: 3 to 5 minutes.
