White Tea
A leaf from the camellia senensis plant has little to no processing. The leaves are delicately hand plucked, at times just the perfect bud is pinched. The leaf is dried and fired to stop oxidation. There is caffeine in the leaf, with much debate as to how much. The water temperature for steeping should be around 160 degrees F and left to rest for 7-10 minutes. This tea is very light in weight and therefore we recommend 1-2 teaspoons per cup.
